Assuming, you use Media Player Classic Home Cinema to play the files, go to "Navigate" and choose "Audio Language". Second option is to permanently change the properties of the .mkv file. For that I recommend "mkvmerge". Download it >SNIP< and run it. Press Ctrl+E - to run "Header Editor". Then press Ctrl+O - to open desired file on your hard drive. After the whole file loads you should see video and audio tracks. First audio track is usually default to be played along with video track. In case of Rome episodes, all Audio tracks 2 have "default track" flag assigned. Unfortunately, for most its Russian audio.
